      Since moving to Canada, only really had bagels at one place: "Great Canadian Bagel". Standard stuff, but they make a cheddar and jalapeño bagel that is really good. The chewiness of the bagel in conjunction with those flavors makes it incredibly satisfying.

          Sorry, but I think a 'true' handmade bagel should be be made from a rope that is wrapped around your hand and then rolled/pressed to make a seam. It gives it that overlapping 'knot' texture at one point, which gives it more variety of texture. When I was a kid I used to hang out at the local 'Bagel Barn' and watch them being made - we called the family that ran the place the 'bagel benders'. Simply punching a hole in the middle and stretching it out makes it more boringly uniform like a machine made bagel. But still, I would eat your bagel any day...

                                                I had a feeling that these bagels would overproof given 2 tsp of yeast and overnight long proof and they sure did. These came out flat, overproofed, reeked of yeast, tasteless behind the malt flavor. I’d half or even quarter the yeast if I were to make these again. Better yet, stick to the serious eats recipe which actually happens to call for half the amount of yeast.

What’s Eating Dan did a video that gave the full explanation for the “science BS” that causes cheese to melt differently as it ages that you mentioned in your video about grilled cheese! Awesome!                                                                   I made bagels this morning. It was mixed results. I had two issues right up front. I couldn’t find any malt syrup in town so I used molasses (internet said I could substitute). I don’t have a food processor so I used a Ninja which started to smoke/burn up during the mixing :( Everything else went ok after that. The bagels came out darker and they were very chewy and had a good flavor. I tried a few different toppings. Salt, plain, and Everything Bagel from Trader Joe’s. I wish I just left them plain because I think that tasted best.

                                                                  Question: can I just knead the bread since I lack a food processor?
