    The only thing I didn’t see added to the dirty rice were chicken innards. My family has always used the liver, heart, and gizzard from the inside of a chicken when making their dirty rice.

                                                                                          Cajun = pre-colonial french settlers who landed in canada and were then thrown into exile by the british, landing in what is today louisiana where they spoke french until being forced by the government to learn english post civil war.


                                                                                          Cajun culture is often found west of New Orleans with Lafayette being the capital of Cajun country



                                                                                          Creole: is an entirely different mixture of french, african, latino and other cultures largely based in New Orleans.


                                                                                          Creole and Cajun are similar but distinctly different in mant ways.
